Homemade Stovetop Mac and Cheese.

I LOVE mac and cheese! I LOVE cheese! I had a strong taste for it so I found a recipe that I could follow but what I notice is that the flavor leaves me wanting for something else - almost disappointed because it doesn’t satisfy like I want. So, long story short, I tweaked the recipe by adding different spices without using much salt. I also used whole wheat noodles so it is “healthier.” It is mac and cheese though so “healthy” really doesn’t apply. Here is the spice blend that I used. Please let me know if you tried it what you think!

1/8 tsp: ground nutmeg, ground cardamom, cayenne, paprika

1/2 tsp: ground turmeric, ground mustard, white pepper, garlic powder, onion powder, Valentina(Mexican hot sauce - its the best)

I also used a blend of sharp cheddar, gruyere, mozzarella, and ground parmesan.

Blueberry Bread with lemon glaze

It’s blueberry season. And if you’re like me, you like to eat fresh and seasonally. Sometimes I can’t get through something, like blueberries, so I try to find ways to use them up (along with other items that need using too). This blueberry bread uses greek yogurt, lemons, lemon extract (which I usually don’t use but I had it so…), fresh blueberries, and the usually suspects (flour, sugar, egg, baking powder, oil). I wanted to try this because I wanted a light, summery bread and the lemons do that for me.

I will be changing the recipe more next time but this time I used the juice from the lemon to make the glaze. It definitely added lemon flavor that the bread was missing before (one of the biggest reasons I don’t use lemon extract when I can use the real thing but I needed to use it up). I was everything I wanted it to be. The blueberries were all through the bread because of the flour coating and the sweetness wasn’t heavy like some sweet breads can be. Click here for the recipe. I like the onion, carrot, and celery to be very small so I suggest you use a food chopper or processor to help. The celery I would still cut by hand though otherwise it gets mushy.
